Cathy has successfully raised a plant-based family since 2007 and would love to help other families do the same. She works full-time, is a wife, a mother of two, a marathon runner, and knows the challenges of making it work while running a busy house hold. She would love to share the knowledge she has gained over the years regarding grocery shopping, batch cooking, lunch packing and making family friendly, plant-based meals.
Cathy is also an avid runner and is passionate about helping other people, especially children, see how much joy running can bring to their lives. Even though she has been a life-long runner, she believes her plant-based way of eating has helped her with her goals and assisted her in qualifying for and completing 3 Boston Marathons and a total of 8 marathons to date.
